Why is my candy dull when it comes out of the mold?

Why is my candy dull when it comes out of the mold?


After I unmold my candy, the surface is dull, and some of the chocolate evens sticks. I am using the colored candy melts.






There are a couple of ways you can keep your molded candy from becoming dull.

The most professional way to be sure your chocolate stays shiny is to temper the chocolate.

Usually, though, you don't need to temper the colored candy melts.

You may have allowed the candy to get too hot when you were melting it. You always have to be careful with temperature when working with chocolate, in particular.

Another way to help keep your candy from getting dull is to add a little food grade paraffin to the chocolate or compound when melting.

I've also found that just adding about a tablespoon of Crisco shortening to the melting candy works well, too.
