Why does my candy turn hard and dry?



When I make candy it seems fine at first then as it gets a little cooler it seems to turn into a dry play dough substance why is that?


I was making candy and it was a nice candy like a shiny blue...but then after a little while it turned into a rock hard dry play dough looking thing..and it wasn't very good, neither was it as appetizing as it was.






It's hard to say why your candy is turning hard and dry without more information. What recipe are you using?


Are you cooking it to the proper temperature using a candy thermometer?


How are you storing it? In an airtight container? In the fridge?


There are a lot of variables in candy making, so we would need more information in order to try to help you out.
