You know that white stuff on chocolate that looks like mold, but isn't?


What causes the white mold looking stuff on chocolate?






Hi CC,

The white stuff is caused from the sugars and fats separating in the chocolate. This is caused sugar bloom and fat bloom.


The reason this occurs is almost always because of a change in temperature or the result of condensation.
