White Chocolate Peanut Clusters

This White Chocolate Peanut Clusters recipe is a unique twist on the traditional chocolate peanut clusters.

It is a great white chocolate peanut candy for those who prefer white chocolate, or have to watch their caffeine levels. White chocolate has no caffeine. :)

The interesting addition of the marshmallows gives it a bit of color and gooey softness, while the rice crispies give it that added crunch.

Of course, if you are like me and prefer milk or dark chocolate, just make the substitutions and enjoy!

White Chocolate Peanut Clusters

  • 2 lbs. white chocolate or almond bark
  • 1 cup creamy or chunky peanut butter
  • 2 cups salted dry roasted peanuts
  • 3 cups mini marshmallows (pastel ones look nice)
  • 4 cups rice crispy cereal

  1. In a double boiler, combine chocolate and peanut butter over medium heat stirring until well mixed and smooth.

  2. Add the remaining ingredients and stir well to coat thoroughly.

  3. Drop by teaspoonfuls onto wax paper lined tray to set. Store in an airtight container.

Don't worry, if you don't like this particular combination of ingredients, you are easily able to add, and subtract whatever you like to come up with your own unique combination.

Just remember, in a case such as this, if you add and subtract too often, you will end up multiplying in the waistline! :)
