What is the easiest way to make my Chocolate Coating for my truffles Shiny without using wax?

I want to make home-made truffles and plan to try making shells in molds with a shiny chocolate, then fill with ganache. But I don't know any easy way to temper chocolate and I don't want to use WAX or sacrifice flavor.


Can anyone help me?






I guess the easiest way to temper chocolate is with a tempering machine. You can get one at Candyland Crafts.


Apart from using a tempering machine, the only thing I could suggest for giving your chocolate some shine is to add a little shortening or vegetable oil while melting. Using a tsp. or tbsp. (depending on the amount of chocolate) shouldn't alter the flavor too much.


I guess you'll have to experiment and see if you can tolerate the taste. It doesn't bother me in the least, but I'm probably a "chocolate Philistine." :)
