Soft Non Dairy Cream Filling Recipe



In a Medium sauce pan combine;

  • 3/4 cup cocoa
  • 1 cup sugar
  • 3/4 cup "Coffee Mate" non-dairy creamer


...bring to a boil.

Set aside 1 tsp salt and 3 tsp vanilla to be added later (less salt if desired).


Once at a boil reduce heat to a simmer, allow to simmer until all the sugar is dissolved. Once the sugar is dissolved, bring back to a boil and add salt and vanilla beating vigorously as you add.


Freeze. Once frozen, use as a filling for cream chocolates.

That sounds like a good option for those who can't have dairy.

I suppose you could exchange the vanilla for different flavored extracts if you want maple filling, or strawberry filling, etc.

What is the texture like? Is it similar to a regular cream filling?

Do you put the mixture in a container to freeze, or do you let it cool and form balls first before freezing? Any more details you can add would be appreciated.

For a non-dairy one, you could use coconut cream powder.

Sorry...but Coffee Mate non-dairy creamer is mislabled as not actually non-diary. If you look at the ingredients it still contains milk. Disappointing and misleading for those who are allergic to casein (milk). http://www.coffee-mate.com/Faqs.aspx shows the allergen information that it does contain milk.
