Shelf Life Of Truffles

Can anyone put my mind to rest please regarding the shelf life of truffles?

I'm planning on making Truffles for Christmas presents, but I'm slightly worried that Truffles containing cream will go off before friends and family even receive them.

Thank you,
Katy

Hi Katy,

What a yummy treat for your friends and family - homemade truffles! :)

Truffles made with cream will usually last about 2 weeks or so.

If you need the truffles to have a longer shelf life, try substituting a portion of the cream with corn syrup or honey. This will stabilize the truffle giving it a couple of months of shelf life in most cases.

Making Truffles Ahead Of Time NEW
by: Angie

Hi Cindi,

Since you are not dipping the truffles in melted chocolate, I think I'd wait to roll them in the coating until the day before your shower.

It might be safe enough to roll them in nuts or coconut ahead of time without a change in appearance, but I think if you roll them in cocoa powder or powdered sugar, you run the risk of the moisture of the center being absorbed by the powder and it won't have that "dusted" look, but rather a "damp" look, if you know what I mean.

Congratulations on the new baby. What a treasure that is!

Take some photos of your truffles at the shower, and the other goodies, and tell us all about it when you're done. :)

Make Ahead Chocolate Truffles NEW
by: Cindi

I would like to make my truffles around a week ahead of my baby shower. I read somewhere that is no problem and they would hold up fine for 2 wks.

But IF I make them ahead, should I wait to put the outer coating (cocoa, nuts etc) on them prior to the day I intend on using them or the day I make them?

Would the cocoa etc still look nice after a week in the fridge?

Thank you!
