Rice Crispy Easter Eggs

This is a wonderful Easter egg candy recipe to make with the kids because there isn't much cooking involved apart from melting the chocolate.

You may want to use the time in the kitchen to talk about the true meaning of Easter with the children so they can have an understanding of how blessed we truly are.

Chocolate Crispy Easter Eggs

  • 1 cup powdered sugar
  • 1 cup crunchy peanut butter
  • 2 cups Rice Krispies
  • 2 tablespoons oil
  • 1/4 teaspoon vanilla
  • 1 package chocolate chips
  • 1 tablespoon shortening

  1. Combine sugar, peanut butter, rice krispies, oil, and vanilla and mix well.

  2. Mold mixture into egg shapes and place on waxed paper lined tray. Freeze for an hour or two until firm.

  3. Melt chocolate and shortening in a double boiler, stirring until smooth. Chocolate can also be melted in the microwave if you heat in 30 second intervals, stirring each time. Do not overheat.

  4. Dip eggs in melted chocolate and return to waxed paper to set. Chill if desired to help set quicker.
