Why not whip up a batch of rice crispy Easter eggs this year to help your family rejoice in this most special holiday season?


This fun and simple recipe is a particularly wonderful Easter dessert recipe to make with the kids because there isn't much cooking involved apart from melting the chocolate.


The melting can even be done in the microwave so that no hot pots or boiling water is needed. 


You can even use the time in the kitchen to talk about the true meaning of Easter with the children.  If you are a Christian, this can really help them develop an understanding of how blessed we truly are.

You may wonder what "eggs" have to do with the Easter story or how they can be used as a teaching tool. 


Think about it.  Eggs are the beginning of new life, and that is exactly what we are given through faith in the resurrection of Jesus.  We have new life in Christ and the incredible gift of eternal life in heaven one day.


Now that is something to celebrate!

Chocolate Rice Crispy Easter Eggs Recipe

  • 1 cup powdered sugar
  • 1 cup crunchy peanut butter
  • 2 cups Rice Krispies (or Cocoa Krispies - see optional tip)
  • 2 tablespoons oil
  • 1/4 teaspoon vanilla
  • 1 package chocolate chips
  • 1 tablespoon shortening

  1. Combine sugar, peanut butter, rice krispies, oil, and vanilla and mix well.

  2. Mold mixture into egg shapes and place on waxed paper lined tray. Freeze for an hour or two until firm.

  3. Melt chocolate and shortening in a double boiler, stirring until smooth. Chocolate can also be melted in the microwave if you heat in 30 second intervals, stirring each time. Do not overheat.

  4. Dip eggs in melted chocolate and return to waxed paper to set. Chill if desired to help set quicker.


Optional Tips: 

If you don't want to mess with the last step of dipping the eggs in the melted chocolate, just use Cocoa Krispies instead of Plain Rice Krispies to get your chocolate hit.


You can also "decorate" your finished eggs with colored frosting.  The easiest method is to buy some tubes of colored frosting, but you can certainly make your own and use a piping bag.
