Peanut Brittle Not Setting Up

For some reason this year I decided to make peanut brittle -- 3 batches now in trash -- I live in Wa. state and raining constantly -- I have tried cooking and also microwave -- none of them have been pretty golden color or set up at all?

Hi Cheryl,

The rain may very well be the reason why your peanut brittle is not setting up. Humidity is a very important factor in candy making.

Have you tested your thermometer and made sure that you are getting your candy to the right temperature for hard crack?

I do love peanut brittle, especially with chocolate on top!
