Peanut Brittle Is Getting Too Hard

My peanut brittle is getting too hard.


I'm making the brittle in the microwave. I'm cooking it for 6 minutes, adding the butter, vanilla, soda, and then cooking 1 more minute.

The brittle is tasty but too hard.






Usually the reason peanut brittle gets too hard is because the cooking temperature has reached too high a temperature.


Because the wattage of microwaves vary, you may need to adjust either the cooking time or the cooking temperature.


If you look at the candy syrup stages you'll see the different stages and temperatures that determine the consistency of cooked candy.


It may take a few attempts of trial and error on your part to determine the exact cooking time and temperature for your microwave.
