Mini Chocolate Covered Pretzels

by Patti
(St Louis)

When making mini chocolate covered pretzels, how do you get the choc to not pool under the pretzel and fill the little holes??

If I let it drip it practically dries!!
Thanks!!

LOVE this site!

Hi Patti,

To be honest, when I make chocolate covered pretzels, I don't worry too much whether the holes are clear or not. :) The more chocolate the better. Grin!

But, I DO know what you are talking about. I usually end up using a fork to lift the pretzels out of the chocolate. I then tap the fork gently on the edge of the bowl to shake off the extra chocolate before placing the chocolate dipped pretzel onto the waxed paper to set.

The only way to really cut down on the chocolate pooling problem is to allow the chocolate to get a bit thicker before dipping so that it doesn't slide as much after you've dipped the pretzels.

Of course, that creates a new set of issues! You have to work very quickly before it sets further and gets too quick to work with!

If you are particular and really want the holes in pretzels to show, you could poke out the chocolate with a skewer or something when it is just about set. (Just another thought).

Blessings,
~Angie
