Melting Chocolate

In the tips for melting chocolate it says to use shortening instead of butter.

Is this true or have I read it wrong?

I need to make it for putting into chocolate molds.







Hi Nicholas,

You read it right. :) A little trick to help melt chocolate smoothly is to add a teaspoon or so of shortening to the chocolate as it is melting.


This will also aid in allowing the chocolate to set more firmly.


Butter usually contains water and may cause your chocolate to seize when melting. That's why I give that little warning. It doesn't always have that affect, but why take the chance? :)


Some people use a bit of paraffin wax, or Paramount Crystals, but I usually just use the shortening.


Don't forget to show off your molded chocolates when they're done!
