I am having trouble melting waffers.

I am using a melting pot and as the chocolate is melting it looks like pudding. Am I overheating the chocolate?






Hi Annette,

What exactly do you mean when you say the chocolate looks like pudding?

Do you mean it is getting thick? Are you being very careful not to get any moisture at all in the chocolate?


Yes, you could be getting the chocolate too hot. What method are you using for melting? Microwave? Double Boiler?


Chocolate doesn't like to get too hot, and chocolate hates water. :)


If the chocolate isn't seizing (getting to thick and stiff), you may just need to add a little bit of shortening or vegetable oil to it when melting to help thin it out a bit (only about a teaspoon or so).
