How To Remove Truffles From A Mold

Hi,

I have used a really nice plastic mold for some truffles that I made. The problem is removing the truffle from the mold.


The only way I found to remove the truffles was to set the mold into hot water.........not touching the candy truffles. Some come out OK, while others come out of the molds half melted.

Hi Pattie,


You are asking about how to remove truffles from a mold. Have you tried putting the molds into the freezer?


That's the best way I find to remove molded chocolates easily.


It shouldn't take long in the freezer - maybe 5-10 minutes. You can usually tell when the chocolate is ready by holding the mold up and looking at the under side.


The cool chocolate pulls away from the mold and it is usually noticeable if you are using a clear mold.


Turn the mold upside down on the counter top and then gently tap it if needed. The truffles or molded chocolates should fall right out.


I don't recommend putting the mold in warm water to release the chocolate truffles for the very reason you described - your chocolate will melt! :)

Let me know if you find that the freezer method works for you or if you still have trouble removing your truffles from the molds.

I can't remove my truffles from a mold

Hi, I can't seem to get my truffles out of my mold no matter how long I leave it in the fridge or freezer and how hard I bang the mold. I'm using a semi flexible ice cube tray. Could someone help share their technique please? Is it because my truffles are too soft/not tempered?

Joycelyn,

Have you tried putting a little oil in the mold first? Some people have reported that it helps make the chocolates release from the mold more easily.

It shouldn't matter whether you've tempered the chocolate or not. They should still pop out of the mold without too much trouble.

Hi.

Well right now i'm experimenting a chocolate truffles recipe, so I tried to use a Silicone molds, which was very small. I like to ask you, if you have any ideas how to remove it without letting the shape of the truffles be destroyed.

If you've already put the truffles in the mold and now they won't come out, try popping them in the freezer for a little while. The cold should make the truffles contract so that they should more easily pop right out.
