How to keep chocolate candy from getting soft?



Ok, I make chocolate candy with 2 different nuts. I use chocolate chips on bottom (without melting) and pour hot combination on top which melts the chips. then I store in refrigerator after having cooled for a while.


Is there anyway to keep the chocolate from getting soft once I have taken them out of refrigerator?


Because the chocolate doesn't stay hard, it is difficult to sell in a store or in a gift basket. To my understanding even if I used tempered chocolate there would be no difference.


Help please!!








Perhaps your chocolate is going soft because of whatever the mixture is you are pouring over the top of it.


Tempered chocolate does seem to set firmer than non-tempered chocolate, but if you pour hot liquid on top of it to melt it, you'll probably take it out of temper so you would be wasting your time.
