How to I get the nice airy Angel Candy?

I need some help on how to I get the nice airy Angel Candy? I've tried to make two batches of Angel Food candy, and both times when I take it out of the pan it's only 1/2 in thick.


It seems like the top layer is airy but then on the bottom is a layer of hard crunch like brittle.


I'm cooking it on med low for about 10 min and doing the cold water test because my thermometer won't go passed 250. I don't think it's working correctly. Help!!!
