Years ago when I first started making chocolates at home I made Almond Joy and Mounds bars. Well, I can't find my recipe on how to make the coconut filling. Can anyone help with this?

Will This Almond Joy Recipe Do?

Hi Donna,
I think this is the recipe you are looking for. I'm not particularly a fan of coconut, but apart from that, this sounds really yummy! :-)

Recipe for Almond Joy or Mounds Candy Bars

Ingredients:
5 oz sweetened condensed milk
1 t vanilla
2 C powdered sugar
14 oz shredded or flaked coconut
24 oz semisweet chips
1 cup whole dry roasted almonds

Directions:
  1. Blend the condensed milk and the vanilla. Add the powdered sugar a little at a time until smooth.

  2. Stir in the coconut. The mixture should be firm.

  3. Pat the mixture firmly into a Greased 9 x 13 x 2 inch pan. Chill in the refrigerator until quite firm.

  4. In a double boiler over hot (not boiling) water, melt the chocolate, stirring often.

  5. Remove the coconut mixture from the refrigerator and cut into 1 x 2 inch bars.

  6. (For Almond Joy) Put 2 whole almonds atop each bar.

  7. Set each coconut bar onto a fork and dip it into the chocolate. Tap the fork against the side of the pan or bowl to remove any excess chocolate. Place on waxed paper lined tray to Set.

Easy Recipe

I made these last night. They tasted great. However, I will suggest that you chop/grind up the coconut prior to mixing it so it will have a more smooth texture. Also, these are really sweet, I rolled some of the mixture in balls and dipped them in white chocolate/milk chocolate and covered with nuts. I also did some in mini squares. Kids werent too pleased with them but the adults loved them.

Almond Joy Fudge

I recently went to a specialty candy shop and purchased some Almond Joy Fudge. All they did was sandwich a coconut filling between two slabs of fudge. How simple is that. I tried it at home, using my favorite fudge recipe, substituting sliced almonds instead of walnuts and I used this coconut filling. To die for!!!

I'm a big fan of Almond Joys so I made these the other night. Oh man were they good. I caught myself eating three that day so I decided it's probably best to take them to work. I'll tell you what - there were none left come lunch time. Everyone loved them. They did comment they were a bit too rich/sweet, but that didn't stop them.

Kudos on the awesome recipe! I plan on making more this weekend!

Almond Joy Pie

I turned this into a pie with a slightly different recipe.
1 chocolate cookie crust (Storebought)
Melt 3/4 cup of butter
add 7 oz. sweetened condensed milk and 1 tsp. vanilla extract
Stir in 2 3/4 cups coconut
Stir in 1 cup toasted almonds
Melt 1 1/2 cups chocolate chips with 1 1/2 tbsp. veg. shortning
Pour enough melted chocolate in pie crust to cover the bottom.
Press in coconut mixture.
Refrigerate until firm.
Melt and pour remaining choclate over top of pie.
Decoratively add 1 almond on top near the center for each piece of pie (8 almonds)
Chill until firm.

To tone down the sweetness a bit, I used 7 oz. of sweetened condensed milk and only 1 c. of powdered sugar. They turned out DELICIOUS! Thanks for the yummy recipe!

Almond joys are made with milk chocolate and i always felt they should be made with dark chocolate.This recipe is BETTER than almond joy.Yummy

Good

I made them recently, and they were good. They were a bit dry at first so I couldn't shape them at first. But when I added alot more condensed milk to give them the right consistency, they were much easier to shape.
Also, I would suggest using milk chocolate instead of semi-sweet-chocolate-chips as they give the Almond Joy a dark cholate flavor.

Be careful doing the various adjustments

I tried this doing the 7 ounces of cream
and 1 cup of powdered sugar. They were way too
"watery". I tried them in the frig and they
didn't set up right.
I used Hersheys candy bar, milk chocolate
but didn't have a double boiler and had to
add water to the chocolate to prevent it from
scorching.
They taste pretty good but fall apart
in your hands.
The cocconut I have found all has
sugar in it. Is that what you've found too?
I'm back to the drawing board on this.
I think the 2 cups of powdered sugar is necessary.

This recipe is wonderful. I know too much of sugar is bad (too much anything is bad) but I wouldn't think of changing a thing in this recipe... Just eat in moderation and share the goodness with loved ones.

Substitution Suggestion

What about substituting a little corn starch in place of the powdered sugar to make it less sticky and less sweet? I have not tried the recipe, but think I'll play around a little with it...

Milk Chocolate vs Dark Chocolate

Almond Joy candies use milk chocolate, Mounds use dark chocolate. Obviously - use whatever you prefer :) But i think the milk chocolate is paired with the almonds b/c they are slightly bitter and it helps cut that.

Thanks for the recipes and adjustment suggestions, I will be trying this soon, maybe even today! ^_^

Homemade Almond Joys

I used a bag of shredded coconut and some corn syrup. I didn't measure the corn syrup just added it little by little. For the chocolate I used chocolate melts by Wiltons. I don't use microwaves so I put the chocolate melts in a plastic container with a lid and set it in hot water to melt the chocolate. When taking the container out of the water wipe it off so the steams doesn't get in the chocolate. Came out great. The coconut mixture was so good that I added pecans and had a nice time eating it.

Using sweetened coconut

Almond Joy Balls

I had a hard time with the 1x2 strips with keeping the almonds on so I rolled them into small mouth size balls and stuck the almond in the middle.It rolled in the chocolate so easy and put on a wire rack on a cookie sheet with wax paper in between.

not a good Idea to put on wire rack.Sticks to rack after chilling.Just put on wax paper.
