How can I get white chocolate to stay on strawberries?

Visitor Question:

I have been trying to get white chocolate to stay on strawberries and it keeps running off and it won't dry.


I have tried different brands of white chocolate and tried different methods of melting the chocolate.


I have also tried putting strawberries in the freezer and refrigerator. I can't seem to get anything to work.


Any suggestions on what to do?








CCM Answer:

I assume you are using white chocolate alone for dipping and not mixing other ingredients in the chocolate?


Have you tried allowing the white chocolate to set a little before dipping so that it is thicker and not so runny?


It sounds like you may be melting the white chocolate too much so that it is just running right off the strawberries.


Also, be sure that the strawberries are dry after washing them. Use paper towels to dry them well. This should help the chocolate to adhere to the berries better.


Finally, you may want to include a tablespoon of Crisco shortening in the chocolate when melting so that it will set better when it cools. It often gives a nicer finish to the final appearance, too.

dipping fruit in chocolate - won't stay on NEW

dipping figs in chocolate but when they dry the chocolate cracks and comes off after having one bite - doesn't stay on the fig - what am i doing wrong thankyou!
