Glucose Alternatives In Toffee Making

We are a small toffee and candy making plant in Iran. Due to low-quality Glucose available for toffee making in a plant in Iran market, we have decided to find an alternative ingredient to replace with Glucose in our toffees.


So it would be very appreciated if you kindly give us some information about it.

Thank you for your kind words about this site. We are glad you have received some enjoyment from it.


There are different types of glucose syrup around the world, from what I can tell. In the US, it seems that corn syrup is a pretty common substitute.


I honestly don't know if corn syrup would be a practical glucose alternative in toffee making.


If you decide to give it a try, I'll pass on this tip I read about making the substitution.


* Heat 1 cup of corn syrup to boiling. Remove from heat and add another 1/2 cup of corn syrup. Allow the mixture to set and return to room temperature to reach the consistency that would be similar to glucose.
