Fudge Came Out Like Toffee

Why did my fudge come out like toffee?



How can I rectify this? I followed the recipe to the "T", but still my fudge flopped.






Hi Janine,

You may have to cook your fudge a little longer and to a higher temperature. There is some discussion her by other who said I can't get my fudge to thicken that you may find helpful.


Even though you followed your recipe to a "T" there could have been extenuating circumstances like humidity, or a faulty candy thermometer, etc.


Hope you can get your fudge to come out just right.

Try beating it

I just had the same thing. I'd made a batch (of russian fudge) and forgot to beat it after I had finished boiling and cooling it. It set like toffee, instead of fudge.

I had separated some off to try with some rose essence, which I whipped into it, and that part of the batch turned out beautifully.

I did manage to rescue the reast of the fudge - I just melted it again and made sure I whipped it before putting it in the tray this time.
