Emergency!! Can I add melted chocolate to warm cream?

I made a mistake with my mousse recipe and melted the chocolate first.


I was supposed to add it unmelted to a mixture of hot cream and egg yolks. Can I still blend the two?

I'm dealing with a lot of chocolate and don't want to buy more. Thanks!!!!

Sorry I wasn't able to get your answer right back to you quickly in your emergency. Can you add melted chocolate to warm cream? Yes, you can.

It may take a little longer for the mixture to thicken to the desired consistency, but if you haven't added any extra ingredients you should still be fine.

Normally, of course, you allow the warm cream mixture to melt the chocolate as it is combined. You've just hurried it all along and will probably start with a thinner 'mousse' base.

Did you end up just going for it? How did it turn out?
