Chocolate Truffle Is Not Setting

My chocolate truffle is not setting and will not stick together long enough for me to roll into a ball shape.


What am I doing wrong??

Have I added too much whipping cream?
or too much chocolate??

I am running out of time here..

Have you chilled the truffle mixture in the refrigerator for a while? That helps it to set so that you can form it into the balls.


I don't know which recipe you are using, so it's hard to tell what else may be wrong. Did you use the traditional chocolate truffle recipe here on the site?


If you used that recipe and melted the chocolate in the steamed milk, then whipped it as instructed, it should have firmed up in the fridge.


Too much chocolate wouldn't be the problem. The chocolate would help to firm it as it returned to a cool temperature.


It could possibly be too much cream. Like I said, it's hard to know without more information.


If you can provide more details of your situation, maybe we can offer better advice on why your chocolate truffle is not setting.

I don't know which recipe you are using, but I'm going to assume you're talking about the center of the truffle and you've added too much evaporated milk in creating it (though the center ganache is usually made with heavy cream rather than evaporated milk).

The best suggestion I could make is to add some powdered sugar (icing sugar) a little at a time until you get the desired consistency.
