Chocolate staying soft even in the freezer!!!


I am making chocolate bark and some turtles and for some reason they never get hard... All I add to the chocolate was some cream or half and half....


I used a double broiler at a low temp. I don't know if it is the cream or what???? I pour the chocolate and place in the freezer or frig and nothing happens.

Yes, it's probably the cream. Usually for chocolate bark candy or turtle candy, you don't add cream to the chocolate.


You can add a small amount of shortening (1 tsp - 1 Tbsp) to help it melt and be nice and smooth, but the way you are using the cream is really just creating more of a chocolate syrup or sauce. That is not likely to set.


There are recipes that call for cream heated to steaming and then removed from the heat and the chocolate stirred in to melt. That usually creates a fudge-like texture.
