I've always loved peanut brittle, but these chocolate peanut brittle recipes add an extra dimension to that age old treat.


There are two different styles of candy that fall into this category in my mind. The first is more like regular peanut brittle, but with cocoa in the mix to give it that chocolatey flavor.





 

 

 

 

 

 




The second type is made more like toffee and then is smothered in delicious melted chocolate and left to set.


Both varieties are mouthwateringly delicious. I suppose it just depends what kind of mood you are in, or which you can get your hands on the quickest! :)


You'll notice that there's even a combination referred to as Almond Butter Crunch. I absolutely love that stuff. If you haven't tried it yourself, I highly recommend you give it a try.


In the meantime, here are a few chocolate peanut brittle recipes that will get you started in the right direction to making your own. I do hope you enjoy them!



Chocolate Peanut Brittle Recipe #1

Chocolate Peanut Brittle

  • 1/4 cup cocoa
  • 1 tsp. baking soda
  • 1 Tbl. butter
  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1/4 cup whipping cream
  • 1 1/4 cup salted peanuts


  1. Lightly butter a cookie sheet and set aside. Stir together the cocoa and baking soda; add the butter to this and set aside. In a medium saucepan stir together the sugar, corn syrup, and whipping cream. Cook over medium heat, stirring constantly until sugar is dissolved.


  2. Add the peanuts, and continue cooking, stirring often, until the mixture reaches 300 degrees F. on your candy thermometer. Remove from heat and add the cocoa mixture, stirring well.


  3. Pour onto cookie sheet and spread/pull apart into about 1/4 inch thickness. It is best to use wooden spoons or tongs for this.


  4. Allow to cool by placing cookie sheet on a wire rack. When cool, break chocolate peanut brittle into pieces and store in tightly covered container.



Chocolate Peanut Brittle Recipe #2

Chocolate Nut Break Up

  • 3/4 cup butter
  • 1 cup sugar
  • 1/4 cup cocoa
  • 2 Tablespoons light corn syrup
  • 2 Tablespoons water
  • 3/4 cup coarsely chopped nuts (pecans, or toasted slivered almonds)


  1. Melt butter in saucepan; stir in the sugar, cocoa, corn syrup and water.


  2. Cook over medium heat, stirring constantly until temperature reaches 260 degrees F. on your candy thermometer.


  3. Remove from heat and stir in nuts. Spread on ungreased cookie sheet to about 1/4" thickness.


  4. Place on wire rack to cool, then refrigerate until cold. Break into pieces and store chocolate peanut brittle in a tightly covered container in the refrigerator.



Chocolate Peanut Brittle Recipe #3

Chocolate Toffee Butter Crunch

  • 1 cup butter or margarine
  • 1 cup sugar
  • 3 Tablespoons water
  • 1 Tablespoon light corn syrup
  • 1/2 cup coarsely chopped nuts (pecans or almonds)
  • 3/4 cups semisweet or milk chocolate pieces
  • 1/2 cup finely chopped nuts (pecans or almonds)


  1. Butter the sides of a large saucepan.


  2. Melt the butter or margarine. Add sugar, water, and corn syrup. Cook over medium heat until temperature reaches 290 degrees F. on your candy thermometer. Remove from heat and quickly stir in the coarsely chopped nuts.


  3. Spread on buttered cookie sheet or 9x13 baking pan. Allow to cool for only 2-3 minutes until toffee surface is firm. Sprinkle chocolate pieces on top.


  4. After a couple of minutes, spread melted chocolate evenly over surface. Sprinkle finely chopped nuts on top.


  5. Chill until firm. Break into pieces. Store chocolate peanut brittle in airtight container.
