This particular treat brings back so many lovely memories of home and family for me. Chocolate covered cherries candy has always been a family favorite.
My Mom really loves chocolate covered cherries, and us kids fell in love with them as a result. They were a treat for special occasions when Dad would bring home a box.
As we got old enough to buy Mom a present, we knew a chocolate covered cherry was something she would really enjoy. I'm almost 40 and I still want to grab a box for mom whenever I pass a selection of chocolate covered cherries in the store or online. :)

You can also get, what I consider, a "new" variety that is a chocolate covered cherry encased in a crunchy candy shell. You will find this sort at Salsa Express and Harry and David.
Why not make your own? You will find the following chocolate covered cherry recipes fairly easy to master, with delicious results.
Chocolate Covered Cherries - 60 maraschino cherries
- 3 tablespoons butter, softened
- 3 tablespoons light corn syrup
- 1/4 teaspoon salt
- 2 cups powdered sugar, sifted
- 1 1/2 pounds chocolate, in pieces
- Drain cherries thoroughly on paper towels. Combine butter, corn syrup, and salt. Stir in powdered sugar and knead mixture until smooth (chill if too soft).
- Shape 1 tsp. of mixture around each cherry. Place on baking sheet lined with waxed paper. Chill.
- In saucepan melt chocolate over low heat, stirring constantly. Dip coated cherries in chocolate and place back on waxed paper to set. Chill.
- Store in refrigerator in an airtight container. For best results allow chocolate covered cherries to ripen in refrigerator for a week or two before serving.
In Molds: If you are looking for chocolate covered cherry recipes that look as though they have come right out of a box, you can use chocolate molds and use this same recipe by placing your coated cherry in the mold. Just follow the directions for cream filled chocolate candy. You can purchase the molds for a couple of dollars at Candyland Crafts.
