Chocolate Buttercream Candy Recipes

buttercream filling

First of all, let me say that you can actually purchase prepared buttercream filling already in a decorator bag.

These are handy to keep in the cupboard and use to whip up a chocolate covered buttercream candy recipe on the spur of the moment.

They are also great if you are just feeling lazy and want someone else to do the fiddly bit. :) You can find the creme filling bags at One Stop Candle and Candyland Crafts at bargain prices.

Besides buttercream, they've got a variety of other flavors to choose from, too.

Chocolate Covered Buttercream Candy Recipe #1

  • 4 cups sugar
  • 1/2 cup butter
  • 2 cups evaporated milk
  • 1/4 teaspoon salt
  • 2 cups of chocolate chips or pieces
  • 1 tablespoon of shortening

  1. Combine all four ingredients in a saucepan over medium heat until it reaches 236 degrees Fahrenheit on a candy thermometer (soft ball stage). If you like, read more about candy syrup stages.

  2. Remove butter-cream mixture from heat and place the bottom of the pan in a sink of cold water to cool.

  3. Stir well until the candy firms up. Roll into balls or other shapes and place on a waxed paper covered tray and refrigerate for a couple of hours.

  4. Melt together 2 cups of chocolate chips or pieces and 1 Tablespoon of shortening over a double boiler stirring constantly until smooth. You could also use the microwave if you stir every 30 seconds and DO NOT OVERHEAT. If you want a more professional finish, consider tempering the chocolate.

  5. Dip each butter cream candy into melted chocolate and place on waxed paper covered tray to set.

Handy Tip: You can change the flavor of the buttercreams by adding a teaspoon or two of flavoring after removing from heat before stirring it firm. Ideas are maple, mint, strawberry, raspberry, coffee...

Chocolate Covered Buttercream Candy Recipe #2

  • 3 ounces of cream cheese, softened
  • 1/2 cup butter, softened
  • 1 1/2 teaspoons vanilla
  • 4 cups powdered sugar
  • 2 cups chocolate chips or pieces
  • 1-2 Tablespoons shortening

  1. In a large bowl beat together the cream cheese and the butter at medium speed until smooth, scraping the bowl regularly.

  2. Mix in vanilla, then gradually add in the powdered sugar until well blended.

  3. Chill mixture for an hour or so until firm. Shape into balls and place on a waxed paper lined tray. Refrigerate for a couple of hours or overnight.

  4. Melt chocolate chips and shortening in a double boiler, stirring constantly until melted and smooth. Dip each buttercream center in chocolate and place on waxed paper covered tray to set. Refrigerate to hurry the process along, if desired.

Options: Substitute vanilla for almond, rum, orange, or another flavored extract.

Chocolate Covered Buttercream Candy Recipe #3

  1. Combine these four ingredients and mix well until smooth and firm.

  2. Form into balls and place on waxed paper covered trays. Chill.

  3. In the top of a double boiler, melt 2 cups of chocolate chips or pieces, 1 Tablespoon of butter, and 5 drops of vanilla.
