Chocolate Covered Apple Wedges

Has anyone made chocolate covered apple wedges?
Can I use apple wedges instead of the whole apple to make candy apples for my children? They love chocolate candy apples, but waste a whole apple because its too large.
I can't see why it wouldn't be ok....The apple would be completely sealed so I was hoping it wouldn't turn brown.

I don't see why it wouldn't work either. The apple being exposed to the air is what causes it to turn brown, but as you say, they will be covered in chocolate completely.
What I would do, though, just in case is to dip the apple wedges in some lemon juice (or another citrus juice) before dipping them in the chocolate. This will halt that browning process.
You could probably keep some of that Real Lemon juice that comes in a bottle on hand in the fridge and just use a little of that as needed.
You don't want the apples to be sopping wet with the juice, of course, so I'd use a paper towel to dab it dry before dipping.
