I've never fancied myself to be much of a baker but there is one big exception, this chocolate brownie recipe!


There are certain fond memories I want my young son to have, and they do not include him remembering that his mom was a terrible baker.


That's why it's important to me to master a recipe that is simple and tasty!


I have always found that to make the richest brownies you have to use a good base.

In the case of chocolate brownies, the base is obviously going to be your chocolate!


I have always been a fan of the classics so I tend to stick with what I know, and in this case it is Hershey's. 


If you really want the best results in your chocolate baking, in my opinion, Hershey's cocoa powder is the perfect choice.

My Simple Chocolate Brownie Recipe

Ingredients you will need are:

  • 2 Eggs
  • 1 Cup of sugar
  • 1/2 Cup of flour (all purpose)
  • 1 Stick of melted butter (equals 1/2 cup) - you could also use really soft room temperature butter
  • 1 tsp of vanilla extract
  • 1/4 tsp of baking powder
  • 1/3 tsp of salt
  • 1/2 Cup of Hershey's cocoa powder
  • 1 tsp coconut extract (totally optional depending on your taste. I like the kick!)

The one thing my mother always told me is that when it comes to baking you want to be as exact as you can with the measurements because baking is indeed a science! 

  1. Pr-heat your oven to 350 degrees and make sure to grease your baking dish (I prefer a 9 or 10 inch glass dish) with about a tablespoon of butter.

  2. I always start by mixing up my dry ingredients in a big bowl, so you have the flour, sugar, salt, cocoa and baking powder.

  3. In a separate dish lightly beat the eggs (I was always taught not to over beat the eggs and that helps keep the brownies from being too dense!).

  4. Add the remaining wet ingredients in with the beaten eggs and mix them well and then slowly fold in that mixture with your dry ingredients.

  5. Evenly spread the brownie mix into your greased pan and then pop them right into the pr-heated oven!

  6. My oven tends to cook very fast so I usually need to pull my brownies out after 18 minutes, but if you're not working with an ancient oven like mine your brownies should be good to go after 20-25 minutes. Remember to do the “toothpick trick,” stick a toothpick into the brownies and if it comes out clean then your brownies are ready.

Now when you think of brownies what comes to mind? For me I think of gooey, warm, soft, chewy, sweet and square! 

Here comes the kid approved part. My son and I collect cookie cutters. We have mini ones, that are roughly the size of one brownie square.

Once the brownies have had a little time to cool, I let him pick a shape (these days he likes the dinosaurs!). I spray a touch of non-stick spray onto the cutter and quickly press the shape out of the brownie, and it's a hit for both him and I! 

I truly feel like this chocolate brownie recipe is simple enough for anyone to do at home but has such rewarding results.
