Carob Candy Squares
How about trying a recipe for Carob Candy Squares? You will love this nutty, chewy, fruity, treat that has the hint of chocolatey flavor that comes from carob.You don't have to follow this carob candy recipe exactly. You can add or change any of the "filler" fruits and nuts to accomodate your own favorite flavors. I personally don't care for coconut, so I would leave that one out entirely. :) The basic idea works with almost any combination. Play around with it a bit until you discover your own secret recipe. Carob Squares Recipe 1/2 cup honey 1/2 cup creamy peanut butter 1/2 cup unsweetened carob powder 1 cup dry roasted peanuts 1 cup raisins, chopped pitted dates, or figs 1 cup flaked coconut Combine the honey and peanut butter in a saucepan over low heat, stirring until melted. Remove from heat and stir in the carob powder until well combined. Add nuts, fruit, and 3/4 cup of the coconut. Press mixture into a loaf pan lined with waxed paper. Sprinkle remaining coconut on top. Cover and chill until firm. Cut into squares and serve, or store in airtight container in the refrigerator. Return from Carob Candy Squares to Carob Candy
