Can chocolate cups be made in advance?

I am making up to 100 servings of dark chocolate mousse and am planning on serving it in white chocolate cups with a raspberry sauce.


The technique I'm going to use is to dip balloons in cooled white chocolate, refrigerate until hard, and then remove balloons.


Since I have so many cups to make, how far in advance can I make them? How should they be stored?


How far in advance can the mousse be piped into the cups? Do you see any problems with my planned techniques?

I haven't made chocolate cups using a balloon, but I don't see why it wouldn't work.


Can chocolate cups be made in advance? Here are a few things to keep in mind.


You don't want to chill the white chocolate too long, just long enough for it to set. If you chill it too long, you may have trouble with condensation build up which will cause a bit of chocolate bloom


The white chocolate cups should keep well for weeks, so you can definitely make them up ahead of time. You'll want to store them in a cool place (not refrigerated) and away from strong smells. An airtight container is even better. I think the trickiest part will be what you'll put them in to keep them from sticking together or cracking, etc.


As for the mousse, that's another story. That will have to be made up very close to the time you will be using it. I would probably not want to recommend longer than the day before, but you should really consult your mousse recipe to see how long it will keep.
