A Peppermint Candy Recipe With A Twist!
I saw this simple peppermint candy recipe a few weeks ago and have been waiting for the right moment to make it.
Last night that moment came, and I wanted to share the results with you.
At our church we meet a little bit early before the service to share a cuppa and a little snack so we can enjoy the fellowship and catch up on our week.
Some weeks we bring homemade goodies and other weeks it's a quick packet of something munchie at the last minute. :)
This week I wanted to bring something homemade, and I knew this quick and easy peppermint candy recipe would be perfect. Special thanks to Christy from The Girl Who Ate Everything for giving me the idea.
White Chocolate Popcorn With Candy CanesI love chocolate! I love popcorn! I love candy canes!
I've certainly enjoyed my fair share of chocolate covered popcorn in the past, but I never thought about making it a trifecta by adding peppermint candy canes to the mix.
Turns out I didn't know what I was missing. :) This chocolate peppermint popcorn recipe is super fast to make and you only need three ingredients.
- 8-10 cups of popped corn
- 1 1/2 cups of chocolate chips or melts
- peppermint candy canes
- Start by popping up the popcorn and setting it aside to cool. I used a bag of microwave popcorn because I happened to have some on hand, but you can use regular popcorn and pop it in a pot on the stove or in an air popper (I've got to keep my eyes open for one of those.)
- Next you want to crush your candy canes. I crushed a whole box (12 candy canes) in my Thermomix, but made the mistake of whizzing it a bit too much and ended up with powder instead of chunks.
I had intended to keep it chunkier, but I kind of like the way it turned out, so maybe it was a lucky mistake. :)
If you don't have a Thermomix (I know most people don't), you can use a food processor, coffee grinder, or simply pop them in a ziploc bag, wrap a kitchen towel around it and bash them on the counter or with a mallet.
- Now it's time to melt the chocolate. I used white chocolate melts, because that's what Christy used (white almond bark), but having thought about it further, I think milk or dark chocolate would be just as yummy, if not more so, though maybe not as gorgeous looking. :)
Anyway, you can melt your chocolate in the microwave (stirring every 20 seconds) or over a double boiler, whichever suits you. I used the microwave.
- Once the chocolate is melted and smooth, stir in half of the crushed candy canes and save the rest for sprinkling on top.
I admit I got a little skittish here and didn't use all of my candy cane powder as it seemed like an awful lot. I probably could have used it, but it was perfectly yummy as it was and I still have enough left over for another batch. ;)
- Finally, pour the chocolate candy cane mixture over your popcorn and stir thoroughly to combine and cover the popcorn well.
I got my hands in it and really made a nice gooey delicious mess. :)
Spread the covered popcorn onto a layer of waxed paper or baking paper to set and then store it in an airtight container.
My Candy Cane Popcorn was a big hit at church this morning. Yes, I know it's not really a "breakfast" kind of treat, but no one seemed to mind!
