I hope you are enjoying spring or autumn, depending on what part of the world you hail from! I love the changing of the seasons. I'm always looking for fresh ideas and new recipes to try.
This month I want to pass along a yummy chocolate mousse recipe from a friend here in Australia.
I also want to show you an adorable cake that my sister made for one of her boys. I think you'll love it, especially if you have young ones of your own.
Finally, I'll leave you with some great gift ideas for Mother's Day. You only have 10 days left to organize a special treat!
Chocolate Mousse
This delicious chocolate mousse recipe was given to me by my friend Marian. It serves 6, but you can adjust the measurements to make more or less as you desire.- 300 g (12 oz.) dark chocolate, chopped
- 3 eggs, separated
- 1 1/2 cups of thickened cream
- 6 tsp. castor sugar
- Melt chocolate over a double boiler. You can use the microwave if you are careful and stir every 30 seconds.
- To the chocolate add the egg yolks and cream and whisk until smoooth.
- In a separate bowl, beat the egg whites until soft peaks form. Add the sugar and beat until dissolved.
- Gently fold the egg white mixture into the chocolate mixture and scoop it into your chosen glasses or goblets. Chill in the refrigerator for several hours or overnight.
- Top with cream, fresh berries, or grated chocolate (why not all three?), and serve.
A Birthday Cake Surprise!
My sister, Heather, has 8 children. She is always making adorable birthday cakes for the kids' birthdays. I just had to share her latest with you because it is so cute and clever.This caterpillar cake was made using a round bundt or angel food pan that has that hollow center. You can really use any traditional cake mix, boxed or homemade, that you prefer.
After the cake has cooled, you simply cut a third of the cake from the whole and then cut that piece in half again. Use the large piece for the middle hump portion of the cake and the two smaller pieces for either end.
Decorate the cake with your choice of icing and then create the details of the caterpillar using melted chocolate for the stripes, round fruit snacks for the eyes and spots, and chocolate licorice and mini-marshmallows for the legs and antennae.
